Energy filled breakfasts for Busy Mums !

If there is one thing a lot of mummas out there don't have it is definitely TIME !


Every day consists of putting the kids first and your needs and health second. Some days you find you aren't even eating and when you finally have that sit down... it's school pick up time ! Between work, hubby, kids and just a lot happening in your life eating is at the bottom of the priority list some days.


I work with so many mums every single day and understand that their lives are on full speed all the time so I am here to give you my top 5 Energy Filled Breakfast Recipes for all of you busy mums out there ! These can all be made either the night before or completely cooked, on a plate and ready to eat in under 8 minutes.



1. Overnight Oats


This easy & healthy breakfast should be an absolute staple for busy mum's. This can easily be made the night before and can be grabbed on the go to school drop off or work. It can be challenging juggling kids, exercise, work and trying to eat healthy so this one is definitely an easy, delicious & healthy recipe to always keep in your back pocket when times get crazy !



2. Omelette with Mushroom, Onion & Tomato


Now this breakfast is my absolute go-to when I am feeling a little low on energy because it always boosts me up ! I mean what can beat a hot & fresh omelette filled with a little spinach, mushrooms, onion & tomato. This breakfast will take around 8 minutes to make due to the chopping of the onion & tomato and whisking of the eggs but it is still super simple !

Ingredients:

- 1/2 diced tomato

- 1 handful of Spinach

- 1/4 diced purple onion

- 1 small handful of sliced mushrooms

- 1 tsp of olive oil

- 2 Eggs

- 1 Tablespoon of Water


Method:

1. Heat up a pan with olive oil. Dice onion and add to pan with mushrooms. Once onions become translucent add in spinach and tomato, cook for a further 1-2 minutes then take out of pan and onto a plate.


2. Add a little extra teaspoon of olive oil and heat up pan. Whisk eggs and water in a bowl then add to pan. Wait for eggs to turn golden brown underneath and egg on top to firm. Add veges onto egg and fold egg in half. Cook for a further 2 minutes and serve hot.

3. Breakfast Smoothie


Now this is another MUST HAVE recipe. Smoothies are the most convenient breakfasts you can have. You can either blend it first thing in the morning or last thing at night and grab, go & drink in the morning.


4. Breakfast Egg Muffins


Now this recipe is not mine but it is from the show.me.the.yummy blog. This recipe again can be made the night or even a couple nights before hand. You can enjoy it cold or put it in the microwave for around 30 seconds for a quick and warm breakfast to start your day ! Click here to access this amazing recipe !

5. Smashed Avo


An absolute classic breakfast and again one of my favorites ! I mean who doesn't like a good smashed avo ? You just don't have to pay $18 at a cafe for this one lol. This is full of everything you need, some healthy fats, protein and carbs and is a perfect way to kick start your day x
